Are there any downloads for the PlayStation version of the music in a format that is playable ingame? I've looked around but can't find anything. Maybe someone has something lying around.
I have the D1 and D2 PS discs but I don't know how to extract the music from them. Are there any tools I can use?

It is just ordinary redbook CD audio, it can be played in almost any CD player and ripped just as easily. I wonder if Exact Audio Copy is still around, would probably be the best if it is still around. Otherwise I think foobar2000 can play/rip from CDs, though I haven't tried it in a long time (I don't even have a permanent optical drive in the PC anymore).

I believe D2 and the mac versions of the games had their music in a standard CD Audio format but the PSX versions used a different format that let them fit a few more minutes of audio on the CD. I remember hearing somewhere that the Mac/D2 CDs would play in a CD player but the PSX ones wouldn't.
Doesn't necessarily mean it can't be ripped, however, there's no need...

I meant actually putting the music in a level. Sorry for not making this clearer.
That link is still super useful though, so thanks still.
I forgot planet descent even existed, so it's time to look through there. (And find some other interesting stuff while I'm there too.)

Oh, that'll depend what version of the game you're running.
If you're running Rebirth the easiest thing would be to look for the installer A Future Pilot put together, which will basically do it all for you. Then, if you're curious about the format you can just look at it :)
